Why is vinegar such a good greenware mender?

Vinegar/mender

Vinegar is a great greenware mender. The acid in the vinegar encourages the clay particles to form box-like structures which link together and become larger particles. The larger particles then sediment. The box-like structure is called 'card house structure'.
